Great comfort food and so easy to make! I used the recipe from Cooking Light with a turkey thigh. What i liked best was tasting the congee before I added the meat back in. It had a delicate and clean taste of rice and ginger and was sooooo yummy. Once I added the meat, 1 small thigh which was still a half pound, I found it masked the delicate ginger flavor that I really like. So next time I may still use the turkey, because it added so much flavor but do something else with it. I will make this soup again and again.

WOW! What an event!! About 300 people attended the Yoga at the Ashram Open House. There were more than 25 healers offering free treatments at the event: chiropractic, massage, aromatherapy, Sat Nam Rasayan...

As part of the amazing wide selection of treatments available Sybil, Nam Joti and I set up a mini-community acupuncture clinic with 4 chairs and planned to offer 20 minute sessions. We did this by scheduling tightly and treating a patient every 5 minutes. The sign-up for our clinic quickly filled up... so much so that we continued treating folks after our clinic closed! The Open House ran for 3 hours; during that time we provided 34 acupuncture sessions.

Big Thank Yous go to all the folks who organized and promoted this outrageously successful health fair. Clearly our neck of the woods is hungry for natural health.

Oh, and Rodney Poles and his crew from the Bellingham Whole Foods were amazing in the kitchen. Everyone loved the food and the new eggplant quinoa dish was dee-lish!!!

Stay warm!
